Food52



On my way to work this morning, I was listening to my favorite show on KCRW called Good Food. Host Evan Kleiman had former Times food editor Amanda Hesser on from Food52. Food52 was developed while she and Merrill Stubbs were working on a cookbook, and they both realized that the best recipes come from home cooks. I couldn’t agree more; I grew up in a family where life revolved around great food. Some of the best meals I’ve ever had were made by my aunt, grandmother and mother.

Here’s how Food52 works: each week, the website will highlight a category or specific recipe they are looking to include in their cookbook. Readers send in recipes and then people votes on the best ones. The winning recipe will make it into the cookbook. What an amazing idea. I mean, you could be a published cookbook author! I am absolutely obsessed with this site because not only can you submit recipes, but there are endless recipes to try. You have to check this out!

 

 

Gluten Free Butternut Squash Lasagna with Sage

 

Ingredients

1 medium sized butternut squash
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
1 pound whole-milk ricotta cheese
1/2 cup heavy cream
2 large egg yolks
1/2 pound Fontina cheese, coarsely grated (2 cups)
2 tablespoons unsalted butter
1/3 cup fresh sage leaves
Gluten Free Rice Lasagna Pasta – I like DeBoles
4 ounces finely grated Parmesan cheese (1 1/4 cups)

*You can of course substitute with regular pasta

Directions

1. Preheat oven to 425 degrees. Toss squash, oil, and 1 teaspoon salt on a baking sheet. Season with pepper. Bake until light gold and tender, 25 to 30 minutes. Let cool.
2. Boil Gluten Free Lasagna Pasta for 10 minutes.
3. Reduce oven temperature to 375 degrees. Combine ricotta, cream, yolks, fontina, and season with salt.
4. Melt butter in a small saute pan over medium-high heat. As soon as it starts to sizzle, add sage, and cook until light gold and slightly crisp at edges, 3 to 4 minutes.
5. Place squash in a medium bowl, and mash. Stir in sage-butter mixture. Season with salt and pepper.
6. Spread 3/4 cup of ricotta mixture in a 9-cup baking dish. Top with a layer of noodles. Spread 1/2 of the butternut squash mixture over noodles. Top with a layer of noodles.
Spread 1 cup of ricotta mixture over noodles. Repeat layering once more (noodles, squash, noodles, ricotta). Sprinkle Parmesan over ricotta mixture.
7. Place baking dish on a rimmed baking sheet, and bake until cheese is golden and bubbling, 45 minutes. Let stand for 15 minutes before slicing and serving.

Roughing It....Well, Sort Of.


 
Late last week, the television show I had been working on for the past few months wrapped, and boy, did I need a vacation. My dear friend Celia was getting married in Los Olivos on Saturday, and her wedding couldn’t have come at a better time. We had originally planned just a quick overnight trip for her wedding, but when Mark found out he didn’t have to work on Friday, our trip turned into a full weekend getaway. Needless to say, I was thrilled!

I looked into places to stay on Friday night that were en route to Los Olivos and came across El Capitan Canyon in Santa Barbara. Normally, I am not a “camper,” but might I say, I’m quite a “glamper." And what a place to camp in style - this place is absolutely amazing! El Capitan has Cabins (which we opted for) or Safari Tents. Really, this is the perfect place for those of you who love nature but aren’t crazy about roughing it.

Our Cabin was beautiful – complete with creek views, charming cedar interiors, a fireplace, large deck and deep soaking bathtub. Honestly, the experience couldn’t have been more relaxing. And did I mention, they even have WiFi! I know, I know. You can take the girl out of the city, but…

In the evening we barbequed our dinner, drank wine and took in the beautiful ambiance that city dwellers rarely enjoy. Our experience was magical. On Saturday morning, we had breakfast at the restaurant on the grounds, and later walked down to beautiful El Capitan Beach and hiked to the resort's organic garden.

Lonny Magazine

 

I think it’s safe to say most of us are all still mourning the loss of Domino. Funny enough, it was Mark who broke the news to me, nearly a year ago, that the magazine was folding. I will admit, though, that when he told me Domino was going out of business, I was only half-listening and thought he was talking about Domino’s Pizza, not one of my favorite home décor magazines! So naturally, I didn’t have much of an immediate reaction to this earth-shattering news.

Reality set in the next day though, when I saw that my friend Diana had posted something on Facebook about Domino going out of business. I was in complete and utter shock. I mean, how could the magazine that was loved by virtually everyone cease to exist?

Well, the magazine has been history for some time now, and nothing has come along to fill its place. Luckily, I kept every single Domino issue (hello, collector’s items!), and so now I find myself flipping through the issues in the hopes that there was something I didn’t catch during the first few (hundred) readings.

Don’t fret, my Domino devotees, there is still hope for all us! I recently read an article about Lonny, an online magazine started by Michelle Adams, formerly of Domino. I have been eagerly awaiting the premiere issue of Lonny, and it is finally available online!
